When it comes to summer hosting and what we choose to make for a crowd, it always comes down to two questions... 1) is it easy and 2) does it require heat. No one's got time to slave over food in a hot kitchen to get even sweatier in that summer heat... That's where these easy, summer blackberry + goat cheese crostini appetizers come in! Not only does this make a great appetizer for a crowd, but it could even be a light summertime dessert or stellar breakfast! We could totally see this at a gal's brunch spread. And it's easy, easy, easy but looks fancy AF with notes of mint and lavender. Yeah, lavender. Impress your friends at the next gathering and take a look for yourself!
What You'll Need:
- a baguette
- goat cheese
- one container of fresh blackberries
(This couldn't be simpler!) Slice the baguette against the grain. Spread some of the goat cheese down first. Then top with the blackberries. Our twist? Adding lavender and mint creates the most flavorful combo to this snack! It tastes so light and fresh, we can't get enough. But don't forget to drizzle liberally with honey (because who doesn't love a good bite with honey?!).
We opted for this goat cheese brie, which you can find at Whole Foods! But, if brie isn't really your thing, you can totally choose a more spreadable goat cheese!
What do you think?! Is your mouth watering yet? Would you guys make this for your next summer get together? We love how you can choose how to make it your own... maybe you prefer just lavender, or maybe way more mint, like these last photos above! Either way they are delicious and so perfect for those gatherings when you really don't have time, and refuse to add any heat to your kitchen! If you make these beauties, don't forget to tag us!
