WOW. I don't know about you guys but SoCal has been having heat wave after HEAT. WAVE. Seriously, we can't help but live at the beach these days in all attempts at keeping cool. We've also been trying every form of frozen treat to cool us down and these popsicles have been saving the day! Not to mention, they are 1) so easy to make 2) not expensive to make and 3) so darn cute!! Seriously, I wish I was as photogenic as these popsicles. A girl can dream.... Until then, take down these simple recipes and keep cool ladies and gentlemen!
We made three different yummy popsicles this time around.
Pineapple + Mint | Matcha + Blackberry Cream | Watermelon + Mint Margarita
Pineapple + Mint Popsicle Recipe
- 2 cups pineapple chunks
- 1/4 cup fresh mint
- 1/4 cup water
- 2 TBSP honey
Blend all ingredients together until smooth. Pour into popsicle molds, add popsicle sticks, and freeze until frozen. (About 4 hours)
Matcha + Blackberry Cream Popsicle Recipe
- 1/2 cup sugar
- 1/2 cup water
- 6 oz fresh blackberries
- another 1/4 cup of sugar
- 2 cups plain Greek yogurt
- 1 TBSP matcha powder
- 2 TSP vanilla extract
Begin by combining the 1/2 cup sugar and 1/2 cup water in a saucepan over medium high heat for about 5 minutes, to create a simple syrup. Once the sugar dissolves, allow the mixtue to cool. Rinse and puree the blackberries, then push the blackberries through a small strainer to rid it of seeds. Next, add the 1/4 cup sugar to the blackberry puree and stir together, then set aside. In another bowl, combine the yogurt, matcha, vanilla, and the simple syrup until all incorporated. Lastly, begin to pour yogurt mixture into the popsicle molds, but alternate pouring between the yogurt mixture and the blackberry puree within one mold so that it has both in the popsicle. For added effect, swirl your popsicle stick inside the combo mixture to create a swirl of the two flavors. Freeze at least 4 hours.
Watermelon + Mint Margarita Popsicle Recipe
- 1/4 cup water
- 1/4 cup sugar
- 1/3 cup fresh mint
- 4 cups watermelon cubed
- juice of 2 limes
- 1/3 cup tequila
In a small saucepan, combine water, sugar, and mint, and bring to boil for 60 seconds to dissolve sugar and create a simple syrup. Set aside. Puree the watermelons with the lime juice. Strain the watermelon through a small strainer to remove seeds and any leftover bits. Stir in tequila and the mint simple syrup. Pour mixture into molds and freeze until solid, about 12-24 hours. (The alcohol will make it take longer to freeze than the others!)
